Mise en place
Breaded pork loin
previously marinated and breaded
Watercress velouté
stir fry some watercress, garlic, onions, tomatoes and peppers, after that add some chicken stock and reduce it to 2/3 of the total volume. Blend and strain it and finally add it to a blonde roux for thickening.
Mashed potatoes
seasoned with butter and spices
Zucchini
al dente boiled and sliced
